The story behind "Butcher with yak meat in Nyalam, Tibet"

On one of the few side streets (Nyalam is not much more than a main street), I found this man, selling freshly cut yak meat, the knife still on the meat for future clients who might want a piece.

Less a violation of our health codes as it might seem, as it freezes most of the days here on the Tibetan plateau, and the strong uv light will kill most germs that brave the cold…
